“HINEMOS” is derived from an ancient Japanese word meaning “all day” or “every moment.”
We have redefined sake by moving away from complex specifications and technical jargon, and instead centering it around the universal concept of “Time”—something shared by everyone around the world.

Visualizing the Passage of Time.
The design is constructed around the core concept of the “Time” named on each bottle.The cap displays the specific “Time,” while the body features a bold, original logo that fuses the numeral of the hour with the angle of the clock hands.The lines and forms of the design are inspired by the flavors associated with that particular moment in time.

The “Refrigerated Brewery” in Odawara: Where Tradition Meets Innovation.
Supporting the designed flavor of HINEMOS is the fusion of over 300 years of history at Moriyama Sake Brewery and a state-of-the-art brewing environment.
Located in Kanagawa Prefecture, the entire brewery functions as a massive refrigeration facility, enabling “Four Seasons Brewing”—the ability to brew stable, high-quality sake all year round.
Within this environment, we honor traditional craftsmanship while also challenging conventional frameworks of sake brewing.

(Toji)
Appointed as Toji at just 27, he won the Gold Prize at the Annual Japan Sake Awards in his second year.His sake has since received top honors worldwide, including Silver at the International Wine Challenge and Platinum at Kura Master.

Can I bring the bottles on the airplane when returning home?
Yes. The bottles can be packed in your checked baggage.For 500ml bottles, we recommend using a cylindrical protector box for extra safety.By default, bottles are wrapped in a protective net before purchase.
What kind of flavors do you offer?
We offer a wide range of flavors, from floral, honey-like sweetness to classic, dry Japanese sake styles.With alcohol levels ranging from 2% to 16% ABV, you can find a sake that suits your taste—whether you usually enjoy beer, wine, whisky, or even tequila.
What ingredients are used?
Some of our sake features distinctive profiles, including rosé-style sake.All are made with only water, rice, and koji — no added sugar and no chemical additives.
Do you have English-speaking staff?
